when I worked at a restaurant we boiled them first..they do taste a bit different than if you fry raw ones but are still very good.

There's no such recipe as "American potatoes" really. There are potatoes that are grown in the US though, lots of varieties.

As far as cooking methods, that's a matter of preference. Boil, roast, fry, smash, mash, whip, stuff, load, casserole, hasselback, hash brown, and a thousand other tasty ways to eat a potato.

Do you mean fried potatoes? I've never heard of "American potatoes."
Just slice them and pat them dry, then fry them in butter or oil in a skillet until browned.
